It's a David vs Goliath story. Just like what happened between taxists and Uber or the music industry vs Napster. The big dairy industry that represents the status quo didn't like a foodtech like NotCo getting in the market with a dairy alternative product like NotMilk, so they sued.

And instead of trying to make a new point to defend, we literally copy-pasted quotes from the original court exerpt documents that -ironically- defined NotMilk in the exact way we want people to know about the product.
