Paul Chant, once the right hand man of Frank Naish, renowned for being the oldest maker of cider in the UK, is an artisan producer of cider in his own right. I spent a day with Paul and fellow workers on his farm in Somerset during cider making in a shed, lit only by an orange spot light and light through the door.
