Turning British Flour into a Chef’s Muse: The Sonata Story
Ask any Italian pizza chef, and they’ll tell you: the only pizza flour worth its weight in dough is ‘00’ grade, and the benchmark? Caputo. It’s the flour of choice passed down through generations of Italian kitchens. But when the pandemic struck, importing Caputo became a challenge, leaving chefs in a bind. That’s when Wright’s stepped up to the plate, literally.
Working with a top Italian pizza chef, Wright’s developed a premium, high gluten, ultra fine flour. The result? A flour not just on par with Caputo, but exceeding it. It needed a name worthy of its artistry. Enter: Cappella. Unfortunately, the name hit a cultural snag in translation (think the top of bell tower), so Wright’s turned to us at Cygnus for a rebrand that could deliver on its promise to Italian pizza chefs while keeping British flair at the forefront.
The Challenge: Elevating British Flour for a Discerning Market
Our task was to rebrand and relaunch Wright’s pizza flour for Italian chefs, convincing them that British milled flour could stand toe to toe with its Italian counterpart. Where Cappella had an unintended quirk, Sonata emerged as a confident and premium brand. With its sleek navy and dough inspired palette, bold yellow typography, and evocative black and white photography, Sonata was designed to make a statement.
What began as a rebranding exercise evolved into a full scale campaign that included social media management, launch assets, and even environmental design for Wright’s new pizza school. This wasn’t just about flour, it was about a cultural shift.
A Strategic Composition
Italian pizza chefs are passionate purists, fiercely loyal to their traditions. Convincing them to try a British milled flour meant more than just a name change; it required building credibility. With over 150 years of expertise in milling, Wright’s had the heritage. Now, it needed a brand that could carry the weight of that legacy and break into a tightly knit community.
We rechristened the flour “Sonata” a name that fit Wright’s existing musical themed product line while nodding to its Italian roots. In music, a sonata is a composition for a soloist, much like the solo talent of a pizza chef. The rebrand brought this narrative to life, creating a ‘Britalian’ identity that felt playful yet premium.
Building Trust, Bag by Bag
We updated the packaging to reflect the elevated identity of Sonata, enlisting renowned chefs Ricardo Regalado and Giacomo Apicella to bring credibility and prestige to the brand. These familiar faces from the pizza world gave the product an authentic edge, helping us open doors to even the most skeptical chefs.
Launching Sonata: Italian Roots, British Made
The Italian Roots, British Made campaign underscored the shared journey between the product and its audience. Both were steeped in Italian tradition but thrived in a British setting. This duality resonated with Italian chefs who had embraced life in the UK.
The campaign centerpiece featured two captivating testimonial films. Chefs Giacomo Apicella of La Smorfia (Oxford) and Umberto Russo of Al Pomodoro (Cambridge) shared their personal journeys and experiences using Sonata. Their stories highlighted Sonata’s advantages: fewer food miles, a lower price point, and consistently fresh quality.
A bold launch video introduced Sonata to the market, combining striking visuals, Sorrento yellow typography, and an energetic soundtrack. Hosted on a brand new website, the campaign captured attention and drove demand even before the first bag rolled off the line.
Extending Sonata’s Story
Our work extended beyond the digital realm. Wright’s new pizza school, aptly named The Sonata Pizza School, became a living showcase for the flour. From aprons and chef jackets to environmental graphics, Cygnus brought the brand to life within the school’s space, creating an immersive environment for chefs and the public alike to experience Sonata firsthand.
A Recipe for Success
By reimagining a British made product for an Italian dominated market, we crafted more than a rebrand; we shaped a movement. Through compelling storytelling, strategic partnerships, and striking visuals, Sonata became a symbol of excellence that chefs could trust. The result? A beautifully orchestrated campaign that turned a challenge into an opportunity, and a bag of flour into a true soloist.
