Chef Jim Thomlinson approached Bubble to develop his 'Merman' brand as he was set to take up residency at The George and Heart pub and hotel in Margate.
Designed to offer a fun, approachable and social dining experience, Merman focusses on showcasing fresh Kentish produce and features a constantly evolving seasonal menu.
The concept had been inspired by mythical mermen and is represented on the menu by outstanding surf and turf dishes. All of the innovative dishes at Merman will be cooked on the kitchen’s own barbecue using local Kentish cherry wood, applewood and grape vines. This helps to enhance the flavour and gives the dishes at Merman a unique twist.
The deadline was two weeks - tight.
Enlisting the help of local illustrator, Rebecca Thomas, Bubble set to work on building a brand new website, designing a new logo, stickers, menus, badges, bespoke greaseproof paper, social posts, screen-printed aprons and t-shirts! Phew!
The Merman launched to much fanfare on July 23rd and as been the talk of the town since!
